Need a Good Cookie Recipe!

I need your help! I'm going to a cookie swap party this weekend, and I need a good but easy recipe. Why? Because I don't do cookies! I just buy the slice and bake kind. Or I use the tubs of dough I've bought from school fundraisers. But for this party, we're supposed to share a copy of the recipe. I guess I can't tear off the ingredient list from the package, now can I?  :)

So help me out. I'd like to take something that's not the typical chocolate chip or peanut butter. What's your favorite recipe?

Missy, I have your solution! I love making these, and they taste JUST like Heath bars.

HEATH BAR COOKIES

Saltine crackers, enough to cover cookie sheet
2 sticks of butter
1 c. brown sugar
1 (12 oz.) bag chocolate chips
(optional - 1/2 c. chopped nuts)

Line a rimmed cookie sheet (jelly roll pan) with foil. (Optional: spray foil lightly with cooking spray. Note: do NOT use waxed paper. Trust me on this.)
Line foil with crackers.
In saucepan, melt butter, then add brown sugar. Boil 3 minutes. Remove from fire and pour over crackers.
Put pan in oven, 350 degree preheated, for 5 minutes. Mixture will be bubbling.
Take out, sprinkle chocolate chips over top and wait a couple minutes until chips melt.
Smooth like frosting a cake.
(Add nuts if using.)
Cool at least one hour and cut or break into pieces.

Rolo Cookies

2 1/2 cups all purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
3/4 cup cocoa
1 cup butter, at room temperature
1 cup granulated sugar
1 cup light brown sugar
2 eggs
2 teaspoons vanilla extract
Bag of Rolo candies, unwrapped
Sugar (for rolling the cookie dough balls in)

Preheat oven to 375. Line a baking sheet with parchment paper. Set aside. In a medium blow, sift flour, baking soda, salt, and cocoa. Set aside. With a mixer, cream butter and sugars together until smooth. Add in eggs, one at a time. Next, add in vanilla extract. Mix until blended. Slowly add flour mixture to sugar mixture and blend well. Take a spoonful of chocolate cookie dough and wrap around one Rolo candy. Make sure Rolo is completely covered with cookie dough. Roll dough ball in sugar and place on prepared baking sheet. Continue until you run out of cookie dough. Bake cookies for 7-10 minutes. Remove from oven and let sit on cookie sheet for 3-5 minutes.
